I adapted this recipe from the Real Mom Kitchen cookbook. This is a super easy crock-pot meal.
Ingredients:
- 1 onion, diced
- 2 cups potato, diced
- 2 cups celery, chopped
- 2 cups carrots, sliced
- 1 (10 3/4 oz) can tomato soup
- 1 (10 3/4 oz) can cream of mushroom soup
- 2 cups water
- 2/3 c. quinoa (uncooked)
- 1 tsp. salt
- 1/2 tsp. pepper
- Put all ingredients into a crock pot. Cook on high for 3 hours, stir occasionally. Serves about 8.
- After making it once I thought it might also be yummy to add some corn and green beans or peas to the mix as well. I haven't had a chance to try it out yet though.

Sounds yummy and easy. I've been looking for a recipe where we can use up our tomato soup!
